The prettiest white chocolate rocky road

This really looks too good to gobble up...but alas with kids, they won't hang around on the plate for long. I had to hide some away for later!

Rocky road is a simple and quick recipe always popular with sweet tooths. It's a no bake recipe and one of the easiest to try with kids. They'll love measuring the ingredients and mixing them together. You might loose a few bits of your filling as they taste test as they go along, but this is ok. It's doesn't need to be precise and if you're short on something, just substitute or add more of the other ingredients.

There's virtually no cooking involved apart from melting the chocolate. It's so versatile and the possibilities to personalise it to your own tastes are endless.

We made a white chocolate rocky road with nuts, berries and marshmallow, but you can customise it by adding your favourite things. You can make it with your preferred chocolate - white, milk or dark. Here are a few other suggestions on the filling ingredients you could use:

  • Fruit jelly or turkish delight
  • Glace cherries
  • Rice crispies
  • Smarties or M&Ms
  • Popcorn
  • Dollops of frozen peanut butter (Yum!)

Let's get started!

Getting the ingredients and combining together takes less than 5 minutes.

Ingredients

  • 250g packet marshmallows, halved (if you can only get the small ones, there's no need to halve)
  • 100g packet dried cranberries
  • 110g packet macadamia nuts, roughly chopped
  • 60g pistachios
  • 1/3 cup (35g) desiccated coconut
  • 2 x 180g blocks good-quality white chocolate, chopped (I bought a white eating chocolate to melt, not cooking chocolate)

Method

Step 1: Grease a 20cm square cake pan. Line base and sides with baking paper, allowing a 2cm overhang on all sides.

Step 2: Combine marshmallows, cranberries, nuts and coconut in a bowl. Place chocolate in a microwave safe bowl. Microwave on medium-high for 1-2 minutes, stirring with a metal spoon every 30 seconds, or until smooth. We used the stove top methd for this instead - just place chocolate bits in heat proof dish over a pot of simmering water. Stilr with spatula until melted smooth.

Step 3: Pour chocolate over marshmallow mixture. Mix well. Spoon mixture into prepared pan, pressing down with a spatula. Refrigerate for 2 hours or until set. Using a warm knife, cut into squares. Serve.
